dc.description.abstractIn recent years, the increase in product diversity, the globalization of markets with technology and the awareness of consumers increase the competition in the goods and services sector. Businesses are trying to achieve higher efficiency with less cost (such as production, investment, labor cost) in order to gain competitive advantage. At this point, project management helps businesses. A project can be defined as a series of related tasks directed to achieve a particular result. Project management, on the other hand, is the planning, scheduling and control of project activities so that projects achieve their objectives. Project planning techniques are also Gantt Diagrams, CPM and PERT. In this study, the production process stages of a firm which services in the food (fast - food) sector were examined. The expected activity times for each activity were calculated. Afterwards, the critical path and critical activities were determined. In the following part, the probability of completion of the project within the specified time was calculated.
dc.description.abstractSon yıllarda ürün çeşitliliğinin artması, teknoloji ile pazarların küreselleşmesi ve tüketicilerin bilinçlenmesi mal ve hizmet sektöründe rekabeti daha da arttırmıştır. İşletmeler rekabetçi üstünlük elde etmek için daha az maliyet (üretim, yatırım, iş gücü maliyeti gibi) ile daha yüksek verimlilik elde etmeye çalışmaktadırlar. Bu noktada da proje yönetimi işletmelere yardımcı olmaktadır. Proje belirli bir sonucu elde etmek için yönlendirilen ilgili görevler serisi olarak tanımlanabilir. Proje yönetimi ise projelerin amaçlarına ulaşması için proje faaliyetlerinin planlanması, programlanması ve kontrol edilmesidir. Proje planlama teknikleri Gantt Diyagramları, CPM ve PERT’dir. Bu çalışmada, hızlı yiyecek (fast – food) sektöründe hizmet veren bir işletmenin üretim süreci aşamaları incelenmiştir. PERT yöntemi kullanılarak bir menü yapım aşamaları incelenmiş olup her bir faaliyet için olası süreler hesaplanmıştır. Sonrasında kritik yol ve kritik faaliyetler belirlenmiştir. Devam eden kısımda projenin belirlenen sürede tamamlanma olasılığı hesaplanmıştır.
