Use of response surface method for the prediction of osmo-solar drying behavior of Anamur banana rings

Aims: In this study, banana rings were dried by a solar tray dryer togetherwith osmotic dehydration called osmosolar dehydration. It was aimed topredict osmosolar dehydration drying conditions by Response SurfaceMethod (RSM).Methods and Results: Banana rings were firstly immersed in sucrosesolution and then dried in a solar dryer. Inputs as drying conditions werechosen as solution concentrations, slice thickness, immerse time and solardrying time. Also, outputs are chosen as water loss, shrinkage ratio andyellow color change. The results clearly showed that both water loss andshrinkage ratio have increased due to increased solar drying time andimmerse time.Conclusions: The correlation coefficient (R2) values of the water loss,shrinkage ratio and yellow color change for the RSM model wererespectively found as 0.979, 0.930 and 0.920.Significance and Impact of the Study: Anamur Banana, which has highmoisture content and drying temperature, was dried using a combinationof osmotic dehydration and solar drying. Pretreatment of osmoticdehydration was found to be effective in dried banana rings with solar traydryer.
